Asian Style Lettuce Cups

Ingredients

  • 1 package Broccoli & Cauliflower Rice*
  • 1 head green cabbage
  • 3 chicken breast
  • 1/4 cup carrots
  • 1/4 cup cucumber
  • 1/4 cup red cabbage

Peanut Sauce

  • 1/4 cup peanut butter
  • 2 garlic cloves
  • 3 T sesame oil
  • 2 T lime juice
  • 2 T soy sauce
  • 1 T sriracha

Preparation

Wash and break apart green cabbage leaves into desired number of small bowls. Julienne carrots, cucumbers, and red cabbage and mix together in a small bowl. Mince garlic cloves. Fully cook and dice the chicken. 

Peanut Sauce

Mix peanut butter, garlic cloves, sesame oil, lime juice, soy sauce, and sriracha sauce in a small bowl until fully combined. 

Assemble

Set aside 1/4 cup of peanut sauce for garnishing and toss the cooked chicken in the remaining sauce. Separate chicken between the green cabbage cups. Top chicken with carrot, cucumber, and cabbage slaw. Drizzle with reserved sauce.
