Grate cheddar cheese. Finely chop scallions.
Bring 4 cups of water to a boil in a 4 quart pot. Once boiling season water with salt and add grits in a slow steady stream, stirring constantly. Reduce heat to medium and continue simmering, stirring occasionally, until grits thicken (approximately 5min.). Add cream and butter to grits and stir to combine. Bring mixture back to a simmer. Reduce heat to low, cover, and cook for 40 minutes, stirring occasionally, until mixture is smooth and creamy. Add broccoli rice, stir, cover and continue cooking for 5 more minutes.
Remove from heat. Stir in chopped scallions and cheddar reserving a small amount for garnishing. Season to taste with salt and pepper.
