RECIPES

Broccoli Rabe + Chorizo Pasta

Ingredients

  • 32oz Beet Noodles*
  • 4 links chorizo sausage
  • 1/2 cup shallot
  • 4 garlic cloves
  • 1 cup broccoli rabe
  • 1 cup bell pepper
  • 1/2 cup white wine
  • 4 T olive oil
  • 2 T fresh rosemary
  • 1 T fresh thyme

Preparation

Slice chorizo sausage. Dice shallot, garlic cloves, and bell pepper. Cut broccoli rabe into roughly 3 inch pieces (cut any thicker stems in half lengthwise). Finely chop herbs. 

Assemble

Heat a pan over medium high heat for about 1 to 2 minutes. Add chorizo sausage to hot pan (no need for oil as the sausage will have enough fat to prevent sticking). Cook chorizo until one side has caramelized and flip. At flip add shallot, garlic cloves, broccoli rabe, and bell pepper to pan. Continue cooking until chorizo is caramelized. Add white wine to pan and cook for 30 seconds. Add beet noodles and toss to coat noodles. Cook until noodles just start to soften turning noodles several times during process. Remove from heat, add olive oil and fresh herbs and toss until fully incorporated.
