Burrito Bowl

Ingredients

  • 1 package Broccoli & Cauliflower Rice*
  • 4 chicken breast
  • 4 T taco seasoning
  • 1 cup white onion
  • 2 cups bell peppers
  • 1 cup portabello mushrooms
  • 1 lime

Preparation

Preheat oven to 400F. Toss chicken breasts with taco seasoning until each chicken breast is evenly coated. Slice onions, bell peppers, and portobello mushrooms. 

Assemble

Spread chicken in a single layer on a baking sheet and cook until chicken reaches an internal temperature of 165F (approximately 18min.). Remove from oven and slice chicken. 

Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add onions, peppers, and mushrooms and cook until lightly caramelized. Season to taste with salt and pepper. 

In a separate pan heat 1 tablespoon of olive oil and 4 tablespoons of water in a pan. Once water is simmering add broccoli and cauliflower rice, cover, and cook for 6 minutes on medium heat. Remove lid and drain water. 

Place rice at bottom of bowl. Place vegetables directly above rice. Place chicken on top of vegetables. Drizzle with juice of 1 lime. Finish with your favorite burrito or taco garnishes.
