Cook carrot noodles over medium heat in a small amount of oil until they just begin to soften (approximately 5min.). Set in refrigerator to cool.
Cut, wash, and pat try butter leaf lettuce. Slice watermelon radish.
Finely chop dill. Combine all ingredients in a bowl or blender. Mix until smooth. Season to taste with salt and pepper.
In a serving bowl combine butter leaf lettuce, carrot noodles, and dressing and mix until each leaf is coated with dressing. Garnish with dried cranberries and sliced watermelon radish.
Eat!
