Carrot + Zucchini Noodle Coleslaw

Ingredients

  • 16oz Carrot Noodles*
  • 16oz Zucchini Noodles*
  • 1/2 cup radicchio
  • 1/4 cup cucumber
  • 1/4 cup red onion
  • 2 T chives

Coleslaw Dressing

  • 1/4 cup mayonnaise
  • 1/4 cup greek yogurt
  • 1 T apple cider vinegar
  • 1 T dijon mustard
  • 2 t sugar
  • 1 T fresh dill

Preparation

Cook carrot noodles over medium heat in a small amount of oil until they just begin to soften (approximately 5min.). Set in refrigerator to cool. 
Thinly slice radicchio. Cut cucumber into bite sized pieces. Dice red onion. Thinly slice chives. 

Coleslaw Dressing

Finely chop dill. Combine all ingredients in a bowl and mix until fully combined and smooth. Season to taste with salt and pepper. 

Assemble

In a serving bowl combine zucchini noodles, carrot noodles, radicchio, cucumber, red onion, and dressing and mix until all ingredients are fully covered in dressing. Garnish with chives.
