Mince garlic cloves. Finely grate ginger. Dice onions, carrot, and celery.
In a small bowl grate ginger using a zester or cheese grater. Add soy sauce and sriracha to ginger and mix to combine all ingredients.
In a wok heat 2 tablespoons of sesame oil over medium high heat until oil begins to ripple. Scramble eggs in oil and set aside in a bowl.
Heat remaining 2 tablespoons of oil in the same wok until rippling. Add onion, carrot, and celery and cook until carrots being to soften (approximately 5 to 7 min.). Add shrimp, peas, garlic cloves, and cauliflower rice and continue cooking until shrimp is cooked through and cauliflower has softened (approximately 3 to 4 min.). Add scrambled eggs back to pan and toss to combine. Add sauce and toss to fully coat all ingredients.
