Substitute Butternut Squash Noodles with...

Preheat oven to 400F. Preheat waffle iron. Dice shallot. Chop tarragon. Soak chicken breasts in buttermilk for at least 30 minutes.
Cook butternut noodles in a pan over medium heat in a small amount of olive oil until they begin to soften (approximately 5min.).
Crack the egg into a bowl and lightly beat with a fork. Add shallot, nutmeg, and tarragon to egg and mix to combine. Add noodles to bowl and toss until completely coated. Season to taste with salt and pepper.
Spread egg mixture onto waffle iron into an even layer about 1/2 inch thick and close lid to cook. You may need to do this step in multiple batches depending on the type of waffle iron that you have.
Add cajun spice to panko bread crumbs and mix thoroughly. Remove chicken breasts from buttermilk and dredge with bread crumb mixture. Place on foil lined baking sheet and bake until an internal temperature of 165F is reached and the juices run clear (approximately 20min.).
Place chicken on top of waffle and drizzle entire dish with honey.
