Creamy Spinach + Butternut Squash

Ingredients

  • 32oz Butternut Squash Noodles*
  • 16oz ground beef or sausage
  • 1 cup white onion
  • 5 garlic cloves
  • 1 cup crimini mushroom
  • 1/2 cup cream cheese
  • 1/4 cup whole milk
  • 2 T butter
  • 4 cups spinach
  • 2 t red chili flakes

Preparation

Dice onion, mince garlic clove, and slice mushrooms. 

Assemble

In a large pan over medium high heat begin to brown ground beef. 

About half way through cooking add onions, garlic, and mushrooms to pan with beef and continue cooking until onions are translucent, mushrooms are cooked, and beef is cooked through. Drain any residual liquid from pan. 

Add cream cheese, milk, butter, and chili flakes to pan and stir until all ingredients are fully incorporated. Add spinach and butternut squash noodles and toss until fully coated. Cook until spinach is wilted and noodles just begin to soften (approximately 5min.).
