Cut, wash, and dry romaine lettuce. Finely chop cilantro and mint.
Combine soy sauce, rice vinegar, lime juice, sugar, and sriracha sauce in a small bowl and whisk.
In a serving bowl combine romaine lettuce, daikon noodles, cilantro, mint, and Thai dressing and toss until romaine and noodles are completely covered in dressing and herbs are evenly distributed. Garnish with roasted peanuts.
