Cut the butter into small cubes. Mince the shallot and garlic cloves. Juice half a lemon. Finely chop parsley.
In a large pan heat butter until it starts to foam. Add olive oil (this helps prevent the butter from browning during the cooking process), shallot, and garlic and stir. Cook until onions and garlic become aromatic (approximately 3min.). Add shrimp to pan and toss to coat. Add white wine and cook until shrimp just start to turn pink. Add vegetable noodles and cook until noodles just start to soften (approximately 3min.). Remove pan from heat and stir in parsley and freshly squeezed lemon juice. Season to taste with salt and pepper.
