Sweet Potato + Butternut Squash Gratin

Ingredients

  • 16oz Sweet Potato Noodles*
  • 16oz Butternut Squash Noodles*
  • 4 T butter
  • 1 cup white onion
  • 6 garlic cloves
  • 1 cup heavy cream
  • 1 t ground nutmeg
  • 1 cup gruyere cheese
  • 1 cup fontal cheese
  • 1 cup panko bread crumbs
  • 2 T fresh sage

Preparation

Preheat oven to 400F. Dice onion and mince garlic cloves. Grate gruyere and fontal cheeses. Chop sage. 

In a dry bowl combine bread crumbs and sage and season to taste with salt and pepper. 

Assemble

In a pot heat butter until it begins to foam. Add garlic and onions and cook over medium heat until onions are completely translucent. Add heavy cream and nutmeg and bring to a simmer. Simmer cream until it becomes thick enough to coat the back of a spoon (approximately 10min.). Remove from heat and stir in gruyere cheese until completely incorporated into the cream. 

Place noodles in a bowl and mix to combine. Pour cream sauce over noodles and toss to completely coat noodles. Transfer noodles to greased casserole dish and pour remaining sauce over the noodles. Add fontal cheese on top of noodles in an even layer. Spread bread crumb mixture evenly over the top of the casserole. 

Cover casserole with tinfoil and place in oven for 20 minutes. Remove foil and turn oven up to 450F and continue baking uncovered until breadcrumbs and cheese brown (approximately 10min.).
